Tomato salad

with roasted pine kernels

Ingredients

  • 1 pcs. aubergine
  • 1 pcs. squash
  • 3 large tomatoes
  • 1 handful of feta cheese
  • 1 bag of Earth Control Pine Kernels
  • Salt & pepper
  • Garnish: Fresh basil

Description

Rinse and cut aubergine and squash into slices. Pour a little oil on a grill pan and place the slices on the pan. If using a grill, brush the slices with a little oil and place them directly on the hot grill. Turn the slices so that they are grilled on both sides for 3-4 minutes.

Arrange tomatoes, grilled squash and aubergine slices on a plate layer by layer in a circle.

Roast the pine nuts on the pan until golden. Sprinkle the kernels over the salad, along with the feta, salt, pepper and fresh basil.
