- 1 bag of Earth Control Cranberries
- 300 g Broccoli
- 3 tbsp green pesto (good quality)
- 2 tbsp feta
- 1 handful of rucola
- 1/2 red onion
- 1/2 avokado
- Juice from 1/2 lemon
Rinse and cut the broccoli into small bouquets. Cook them briefly in a saucepan for 2-3 minutes. Meanwhile, cut red onions into thin slices, clean the rucola leaves and cut the avocado into slices. Cool the broccoli under cold water. Add rucola leaves and a green pesto of your choice. Turn it over with the broccoli and place on a plate.
Next, the feta is crumbled over the salad along with the thin slices of red onion and avocado. Drizzle with fresh lemon juice and finally sprinkle with juicy cranberries.
