Red cabbage salad

with orange, figs and roasted hazelnuts

  • 1/4 red cabbage
  • 5 figs
  • 2 oranges
  • 35 g Earth Control Hasselnuts


  • 2 tsp. sherry vinegar
  • 2 tbsp. olive oil
  • 1/2 orange, juice from here
  • Salt and pepper


Finely chop the red cabbage on a mandolin iron or by hand with a knife. Cut the peel of the oranges and cut the oranges into fillets without skin, husks or seeds. Cut the figs into thin slices. Roast the hazelnuts on a dry pan until lightly golden. Remove the shell by rubbing the nuts in a clean tea towel, wchich will loosen the hazelnut shell easily.

Mix the ingredients for the dressing and season with salt and pepper. Mix the dressing with the red cabbage and garnish the salad with orange fillets, figs and roasted hazelnuts.
