Cucumber Tabbouleh

with marinated chia seeds

Marinated chia seeds (marinate for 10 min)

  • ½ dl Earth Control chia seeds
  • 2 dl water
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • ½ eco lime - juice and grated shell from here
  • ½ clove garlic, grated

Tabouleh sallad

  • 1 cucumber
  • 300 g plum tomatoes
  • ½ tray broad-leaved parsley, coarsely chopped
  • 15 leaves mint, chopped


Half the cucumber, scrap if necessary the cores out with a teaspoon and cut into slices. Cut the tomatoes into cubes and flip all the ingredients together, incl. marinated chia seeds.
Season with salt and pepper and top with chopped cashews.
Can be served with grilled chicken or fried entrecotes.
