Cauliflower salad

with toasted pine kernels and parsley

Ingredients

  • 1/2 cauliflower
  • 250 g yellow tomatoes
  • 1 bundle red basil
  • 6 pcs stems broad-leaved parsley
  • 2 tbsp Earth Control roasted pine kernels

Dressing

  • 1 tbsp olive oil
  • 1 tsp honey
  • 1/2 lime juice from here
  • salt og pepper

Description

Tear small bouquets of cauliflower on a coarse grater to turn cauliflower couscous. Halve the tomatoes and mix with the cauliflower. Roughly chop parsley and basil and put it in the salad. Stir the dressing together and season with salt and pepper. Pour the dressing over the salad and top with toasted pine nuts. Enjoyed as an accessory for spicy minced beef or pork eg. grilled chops.
