Cauliflower couscous

with chives, summer apples and cashews

  • 1 large cauliflower
  • 1 bundle chives
  • 2 pcs. summer apples
  • 1 bag of Earth Control cashews


  • 1 bundle fresh parsley
  • 50 ml. olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 colve garlic


Wash and grate cauliflower on a grater. Blend the ingredients together into a dressing and mix with cauliflower couscous. Cut the apple into thin boats and chop the chives and cashew nuts. Top couscous salad with apple, chives and cashew nuts. Enjoy as an accessory for eg. grilled fish, pork chop or chicken.
