- 1 package Earth Control Bulgur Mix
- 400 g cherry tomatoes
- 1 pcs. medium size squash
- 125 g fresh mozzarella cheese, sliced
- 1 bag Earth Control Pine Kernels
- 1 handful of fresh herbs e.g. basil and oregano
- Olive oil
- Salt and pepper
Boil Bulgur Mix as directed on the package and cool slightly. Cut squash into wide strips lengthwise and then grill them on the pan in olive oil for 3-5 minutes. Season with salt and pepper.
Grill half of the tomatoes whole in olive oil on a hot grill pan for approx. 3-5 min. Cut the rest of the tomatoes in half.
Pour the cooked bulgur mix into bowls, serving the grilled vegetables, the fresh tomatoes and slices of mozzarella on top. Top with toasted pine nuts and fresh basil and possibly oregano.
Taste with salt and pepper and possibly some good quality olive oil. Bon appetite!
