- 1 broccoli
- 2 apples
- 2 stalks fresh mint
- 4 tbsp. Earth Control pine kernels
- 4 tbsp. Earth Control Roasted Pumpkin Seeds
- 2 limes (juice)
- 1 tbsp. agave syrup or honey
- 4 stalks fresh mint
- 4 tbsp. olive oil
- 1 pinch salt
Combine the toasted pumpkin seeds in a blender with lime juice, agave syrup, mint leaves and olive oil and blend well. Add water a little at a time until the dressing has a creamy and smooth texture. Taste with salt. Cut broccoli into thin slices, eg use a mandolin iron - make sure to use the stick as well. Cut the apples into small cubes and mix them with broccoli in a large bowl. Turn the dressing well into the salad and top with toasted pine kernels before serving.
Tip! This salad fits really well with a piece of grilled meat, such as pork or beef.
